Creamy Tomato Basil Soup

Ingredients
1 onion, chopped
2 garlic cloves, minced
1/4 c. butter
1/4 c. flour
5-6 cans diced tomatoes
4 T. tomato paste
4 c. chicken broth
1 c. heavy cream or whole milk
1 t. thyme
1 t. basil
1 t. sugar
Salt & pepper to taste
Directions
Chop the onions and saute in butter with garlic on medium heat until translucent, about 5 minutes. Add flour to the onion mixture and continue to saute for a few more minutes. Add garlic and tomatoes with their juices to the pan. Add tomato paste to the soup. Add chicken broth and bring to a boil, reduce heat and simmer for 10 minutes. Soup should be chunky and starting to thicken. Remove the soup from heat and puree in a blender in half batches, or use a wand blender. Return the soup back to the pot and add the cream, or whole milk, and the remaining seasonings, to taste. Continue to simmer soup on low until heated through and ready to serve.
Additional Information
FREEZER MEAL: Cook soup as directed and freeze the extra in tupperware or Ziploc bags.
